Cake



I have a liking for cake, but of course, can't eat it often, I was buying grocery and then thought of cake.  Went to one of the bakery shop, Four Leaves, a few types of cakes, undecided which one to choose, in the end, chose Chocolate Classico @ $3.80 and bought a piece back to eat.

Lady M


(1) I have always wanted to try this Mille Crepe Lady M in Marina Square, but didn't do so, till they open one at Westgate that i went to try it out.


(2) I only took the picture of the counter but not the whole place as there's customers around, worry might get scolded for taking pictures.

Cake

I have sweet tooth, so cake is one of my favourite desserts.  Usually i will buy my grocery once a week, if i were in JEM Fairprice X'tra buying grocery, will drop by Han's to try out their cakes.

Coconut Cake


I had some desiccated coconut left from my previous bakes and has been looking for a recipe that has desiccated coconut in it and from The Cake Crusader blog, came across this Coconut Cake and decided to try it out. Used half of the recipe to do it.  But i'm lazy, so did not do the icing. Add in mixed fruits.

Ingredients
For the cake:
100g desiccated coconut
150ml milk
110g unsalted butter, at room temperature
250g caster sugar
2 eggs
250g self raising flour

For the icing:
25g desiccated coconut – or you can use sweet tobacco (it’s just a name – it isn’t tobacco), available from sweet shops – it’s toasted shredded coconut tossed in cocoa powder
200g icing sugar
75ml water or lemon juice – I used water

Method
2-4 hours before you wish to start baking, soak the coconut in milk.
Preheat the oven to 170°C/fan oven 150°C/340°F/gas mark 3.
Line a 20cm round springform tin with baking paper.
Beat together the butter and sugar until light and fluffy. It won’t go creamy as it normally would because the amount of butter has been reduced to accommodate the milk.
Beat in the eggs one at a time.
Gently stir in the flour, coconut and milk.
Spoon into the prepared tin and level the surface.
Bake for approximately 1 - 1 hour 15 mins or until a skewer inserted into the cake comes out cleanly. Check it after an hour and cover the top with foil if it’s browning too much.
Leave to cool, in the tin, on a wire rack. When the cake is cool enough to handle de-tin it and leave to cool completely on the wire rack.
Now make the icing: sprinkle the desiccated coconut into a dry frying pan and toast gently. It will burn quickly so don’t leave it unattended. I used sweet tobacco from a sweet shop (it doesn’t contain tobacco)
Tip onto a plate and leave to cool.
Place the icing sugar in a bowl and gradually beat in the water/lemon juice – you may not need it all. Beat until you have a glossy, thick, lump free icing. You want a consistency that will ooze but not run...if that makes sense!
Stand the cake on 4 squares of paper or foil – this will collect any icing and stop it pooling on the plate. Simply remove when the icing is set.
Drizzle the icing over the cake and allow it to ooze down the sides a little.
Sprinkle the toasted coconut on top.

Mrs Ng SK's Vanilla Butter Cake


I was craving for Butter Cake and came across Annielicious Food blog with Mrs Ng SK's vanilla butter cake recipe,and thought i try it out.  As my fridge left with a block of butter which is less that 250g (around 190g),  i thought i try out using half the recipe and make it into cupcake.  Makes 7 cupcakes.  Gave 4 of it to my friend and the remaining 3 goes to my stomach.

Lemon Chiffon Cake comes into my mind and i search the web an came across Happy Home Baking blog and her Lemon Chiffon Cake recipe.  As my mould is 20cm instead of 18cm, i thought i add in another egg instead of the 3 eggs as in her recipe. This is what it turn out.

Sugee Cake

I always saw semolina flour in the supermarket, but have not buy before and try doing any bakes using this flour. I saw the Sugee Cake recipe in the Prima Group website and bought a packet of semolina flour back and try out the cake. I have some raisins which i add in to clear stock.

Continental Cake

Another recipe which i try out from the recipe book which i bought is the Continental Cake. I use half of the recipe and add in melon seed, in the end, all sink under the cake.

Recipe taken from Romancing with Cakes by Connie Leaw


Ingredients A
8 eggs
210g sugar

Ingredients B
230g cake flour
1 tbsp baking powder

2 egg yolks


Ingredients C
10g green tea powder
10g instant coffee powder

100g hot water


Ingredient D
11og corn oil

Method

1. Whip Ingredients A until light and fluffy.

2. Add in cake flour and baking powder in Ingredient B. Mix well. Add in egg yolk. Mix well.


3. Mix Ingredients C until fully dissolved. ADd into mixture of Ingredients A and B.

4. Add in Ingredient D.


5. Pour the mixture into a 8" lined and greased baking tray and bake in oven at 170C for 35 min.
