Saw from Sonia blog Chocolate Banana Muffins and i was tempted to make it as chocolate is my favourite and i have not tried chocolate with banana. I was lazy at that time of baking so instead of making muffins, i used a round baking tin and bake it into a cake.
But i make some changes to it as in red colour.
Chocolate Banana Muffins
*makes 10 to 15 muffins (depend on the paper cup size)
125g butter
100g caster sugar
150g cake flour (I use self-raising flour as i do not have cake flour)
2 eggs (large) (I use 3 eggs as my egg is medium size)
1/2 tsp baking powder (I omit this as i'm using self-raising flour)
1/4 tsp baking soda
2tbsp cocoa powder
100ml milk (I use evaporated milk)
1/2cup chocolate chips
150g mashed banana (I peel 2 bananas and the weight turn out to be 199g and i use 199g)
Some banana wedges (I omit it)
1. Beat butter and sugar until fluffy.
2. Add in the eggs one at a time, mix well
3. Sift in flour, baking soda and baking powder, combine well with milk.
4. Add in mashed banana and cocoa powder, mix well.
5. Last add in chocolate chips, combine well.
6. Scoop the batter in to the muffin paper liners to about 3/4 full. Then insert a banana wedge into the middle of the muffin. Repeat till all the batter has been used.
7. Bake in pre-heated oven at 180C for 25mins. (180C for 50 mins)
