Blueberry Cupcakes



I have woke up early on Sunday morning and since i still have time before i go to my friend house, so i did this Blueberry Crumble Cupcakes from Sonia blog and bring it over to my friend house. I have put the blueberry on top as in Sonia blog, but i do not know whey in the end, it sink inside the cupcake.

Biscuit Cake

I bought a book from the bookshop for quite sometimes already and have bookmark some recipes but have yet to try it out. One of the recipe that i have wanted to try out is this Biscuit Cake.


Recipe taken from Romancing with Cakes by Connie Leaw

Ingredients

200g Soda Cracker (crushed)
120g butter
4 eggs
150g sugar

Method
1. Beat the butter and sugar until fluffy and light.

2. Slowly add in eggs. Mix well.

3. Add in crushed soda cracker last.

4. Pour the batter into paper cups and bake in a preheated oven at 170C for about 30 mins till it is cooked.

香蕉巧克力方块Cupcake

I was not satisfied with the 香蕉巧克力方块蛋糕 i did the other time as it was very soft and break easily, so i thought i try it out again. This round i use lesser mashes banana and make it into cupcake (Total 7 cupcake i make). I am satisfied with it this round.

Banana and Oreo Muffins/Cake




Saw from Bakericious blog her Banana and Oreo Muffins, i was tempted to do it, i baked into muffins and cake. I used half of the recipe to bake the cake and used a loaf pan. Half of the recipe i bake into muffins and baked 10 muffins.

Oreo Cupcake





Saw this Oreo Cheese Cupcakes from Hearty-Bakes blog, was tempted to do it as i like oreo biscuits. But i made some changes in doing it.

Original recipe from
Hearty-Bakes blog.
Ingredients:
(A) 3 eggs

3 yolks

180g sugar (i reduced to 150g)

pinch of salt



(B) 1/4 tsp Vanilla Essence



(C) 165g Flour

1 tsp Baking powder



(D) 60g Milk

65g Cheddar Cheese -grated



(E) 70g Corn Oil ( i used melted butter)



(F) Oreo cookies -coarsely chopped

Some whole Oreo cookies for topping



Method:

1. Preheat oven to 200deg

2. Line bottom of muffin tray with paper cups

3. Whip (A) until light and fluffy

4. Add (B) and mix well

5. Fold in (C) and mix until well blended

6. Cook (D) till cheese melts and add into step 5 mixture.

7. Add (E), mix until well combined

8. Fold in coarsely chopped oreo cookies

9. Scope batter into paper cups about half-filled. Topped with one piece whole Oreo cookie

10. Bake for about 20min till firm or golden brown

My version :
Ingredients:
(A) 70g butter

150g sugar

pinch of salt



(B) 3 eggs

(C) 1/4 tsp Vanilla Essence



(D) 165g Flour

1 tsp Baking powder



(E) 60g Milk

65g Cheddar Cheese -grated (I used sliced cheese instead of cheddar cheese as a block of cheddar cheese is 250g and i hardly bake, so didn't get the cheddar cheese)


(F) Oreo cookies -coarsely chopped
Some whole Oreo cookies for topping



Method:

1. Preheat oven to 200deg

2. Line bottom of muffin tray with paper cups

3. Whip (A) until light and fluffy

4. Add in egg one at a time

5. Add in (C) and mix well
6. Fold in (D) and mixed until well blended

7. Cook (E) till cheese melts and add into step 6 mixture.

8. Fold in coarsely chopped oreo cookies

9. Scope batter into paper cups about half-filled. Topped with one piece whole Oreo cookie

10. Bake for about 20min till firm or golden brown

Nigella's Chocolate Chocolate-Chip Muffin

I came across this Nigellas Chocolate Chocolate-Chip Muffins recipe in SmallSmallBaker blog and was so tempted to try it out. But i made some changes to it.

Nigella's Chocolate Chocolate-Chip Muffins

Ingredients (makes 12 muffins)
250g plain flour (I use self-raising flour)
2 tsp baking powder (I omit it)
1/2 tsp baking soda
2 tbsp best quality cocoa powder
175g caster sugar
150g chocolate chips (save 1/4 of the chips for sprinkling)
250ml milk (I use evaporated milk)
90ml vegetable oil (I use melted butter)
1 large egg (I use 2 medium egg as i do not have large egg)
1 tsp pure vanilla extract

Method :

1. Preheat the oven to 200 deg C.

2. Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 of the chocolate chips into a large bowl and mix well.

3. Pour all the liquid ingredients into a measuring jug and mix well.

4. Mix the dry and wet ingredients together with slow and gentle strokes. Stop stirring once the last traces of flour disappear. Do not overmix. A lumpy batter will ensure the muffins stay moist and fluffy.

5. Spoon the batter into paper muffin cases.

6. Sprinkle the remaining 1/4 chocolate chips on top and bake for 20 minutes or until the muffins are dark, risen and springy.

Vanilla Cupcake


The other time i did a Vanilla Cake, recipe taken from Anncoo blog Cho~Cho Train Cake, this round i did cupcake but i use evaporated milk instead of sour cream and i add in raisins. Use half of the recipes and make 9 1/2 cupcakes.

Saw from Anncoo blog her Must Try Chocolate Cupcake and chocolate is my favourite, so try it out. After baking and cooling down, i can't wait to try it out and it's yummy yummy.

Chocolate Cupcake


I use the chocolate cakes recipe shared by Yummy Koh to make it into cupcakes.


I have made some modification to the recipe :

Ingredients:
130g butter* (original is 75g)
1 cup caster sugar
3 eggs* (original is 2 eggs)
1 1/2 cups self-raising flour, sieved
1/3 cup cocoa powder, sieved
1/2 tsp bicarbonate of soda (sieved)
1 cup reduced fat milk ( I used evaporated milk)

Method:
1. Preheat oven to 180 deg centigrade.


2. Using an electric mixer, beat butter, sugar, eggs, flour, cocoa powder, bicarbonate of soda and milk on low speed for 1 minute or until just combined. Increase speed to high and beat for 2 minutes or until thick and creamy.


3. Spoon mixture into muffins cup, smooth top. Bake for 30 minutes or until a skewer inserted in the centre comes out clean. Remove from oven. Stand cupcake for 5 minutes.

Chocolate Cheese Cup Cake

I have wanted to do this Chocolate Cheese Cup Cake quite some time ago, but was lazy to do it till recently.


I used this slice cheese as i still have some in the fridge



As i was in a hurry in doing it, i poured too much of the batter into the muffin cup and it turn out, out of shape, have added some chocolate chips into it.
