30th July 2014


This Hup Tou Sou Cookies from Sonia is one of my bakelist to do, but lazy lah, so drag and drag till have the mood to do it.  Have shared with my friend, if not i think i will finish up all.  I have made 36 pieces using the recipe at 15g each.


Was tempted to try out Chicken Cottage Pie from Sonia blog, but i made some changes to it.  Instead of cauliflower and broccoli, i used crab stick.  Sotong me, Sonia recipe used cream of chicken, i went to the supermarket thinking it's cream of mushroom and bought a can of that, only to realise i bought wrongly when i wanted to do it. So left with no choice, i used the can of cream of mushroom.

Grilled Potato Chips/Chicken Chop with Black Pepper Sauce/Chocolate Banana Cake

Chicken chop came into my mind and i was goggling the web when i came across this Grilled Potato Chip and the Chicken Chop with Black Pepper Sauce, so decided to try it out.  But my Grilled Potato Chip turn out to be a failure and the Chicken Chop with Black Pepper Sauce, didn't turn out to be as tempting as those selling outside.


Grilled Potato Chips from Echo's Kitchen

Ingredients:
2 medium potatoes (Try to use the one with straight body)
1 tsp Butter (Melted)
1 tsp Olive Oil 

Seasoning:
a pinch of salt
a pinch of black pepper powder


1. Peel and clean the potatoes. Use a pair of chopstick or thick bamboo skewer, place one at each side of the potato to hold the potato together, the stick will prevent knife from cutting the potato all the way through. Now proceed to slice the potato to the thickness of your liking.

2. Preheat oven to 400F (205C). Mix together melted butter and olive oil and brush the mixture on the potato, do it twice if you wish.

3. Bake the potatoes for 45 minutes, turn the oven to broil and broil it for another 5 minutes or until the top part turn golden in color.

4. Season with some black pepper and salt before serving. 


Chicken Chop with Black Pepper Sauce ala Malaysian Style from Echo's Kitchen

Ingredients:
4 pieces of chicken thigh (deboned)

For Marinate of Chicken:
1 tbsp of ginger garlic paste (I omit this)
1 tbsp of tomato ketchup
1 tbsp of light soy sauce
1 tbsp of oyster sauce
2 tbsp of chicken stock
1 tsp of chili powder (I use curry powder as i do not have chili powder)
1 tsp of dark soy sauce
1/4 tsp of salt or to taste

For the gravy/Sauce:
1 tsp olive oil
1 tsp butter
1 tbsp all purpose flour
1/2 medium onion (Slice thinly) (I use a small can of button mushroom)
1 Small tomato  (diced)
1 cup of chicken stock
2 tsp of tomato ketchup 
2 tsp of light Soy Sauce
2 tsp of crushed black pepper 

1. Debone the chicken thigh and pound the chicken a few times using meat mallet or the back of your butcher cleaver.

2. Marinate chicken with all the ingredients listed under for marinate, marinate the chicken for at least 20 minutes, I did mine for 1 hour.

3. Meanwhile, prepare the black pepper sauce, slice and dice the tomato and onion.

4. In a sauce pan, heat up butter and olive oil, add the all purpose flour and quickly stirring using a whisk, when the flour turn yellowish in color, add sliced onion, continue to stir until onion turned translucent. 

5. Pour in chicken stock and a little water if you wish to have thinner gravy, stir well and bring to boil.

6. Season with soy sauce, tomato ketchup and black pepper. Cook until thicken.

7. Heat up a frying pan, drizzle a little oil, place the chicken pieces in the pan. At medium heat, cook the chicken few minutes each side until the chicken is cooked. Do not over cook the chicken otherwise it can be too chewy and rubbery.

8. Place the chicken on a serving plate, pour some gravy over it and serve with some side dishes of your choice.


Craving for muffins and wanted to make muffin, but lazy to scope into muffin cup, so make into a cake loft. Chocolate Banana Muffins from Sonia blog.

125g butter
100g caster sugar
150g cake flour (I used Self-raising flour as i do not have cake flour)
2 eggs (large)
1/2tsp baking powder (I omit this)
1/4tsp baking soda
2tbsp cocoa powder
100ml milk (I used 120ml as to finish it up the milk)
1/2cup chocolate chips
150g mashed banana
Some banana wedges (I omit this)

1. Beat butter and sugar until fluffy.
2. Add in the eggs one at a time, mix well
3. Sift in flour, baking soda and baking powder, combine well with milk.
4. Add in mashed banana and cocoa powder, mix well.
5. Last add in chocolate chips, combine well.
6. Scoop the batter in to the muffin paper liners to about 3/4 full. Then insert a banana wedge into the middle of the muffin. Repeat till all the batter has been used.
7. Bake in pre-heated oven at 180C for 25mins. (I bake for 60 mins)

Pandan Coconut Butter Cake/Crispy Curry Fried Fish Fillet



I have bookmark this Pandan Coconut Butter Cake from Bakericious blog for quite sometimes till when i have the mood to do it, so i did it.


I still have a piece of fish fillet left after doing the Fish Tempura, and was thinking of using the Crispy Curry Fried Chicken Wings to try it out on the piece of fish fillet left in the fridge, so this is what i get.

Pandan Kaya Butter Cake/Potato Salad/Thank You


I have printed out the Pandan Kaya Butter Cake from Bakericious blog for quite sometimes till recently have the urge to do it as i did not bake for quite a long time, guess the colour turn out this way as i used evaporated milk instead of coconut milk as i wanted to use up the can of evaporated milk laying there in the fridge.


I have a craving for potato salad after eating it the other day when i was at my aunty house, so decided to do it to satiety my craving.

Mooncake



Trying out on the plum blossom and gold ingot from the recipe in which i bought the mooncake recipe book from the bookstore. But not satisfied with it as it turn out not really like what i have wanted to baked. I use the dough make piglet, but turn out don't look like piglet.

I still have some dough left from the 1st time i did the mooncake, so used up the remaining to make plum blossom in the 2nd round.

Did some traditional mooncake, but 失手, turn out not nice, made only 2, have wanted to make more but as i only bought 1 pkt of red bean paste and not enough of it so can't make more.

Made some piglet, only to realize that i forgot to put choc chip to make the eyes after it's out of the oven.

Shanghai Mooncake



Recently have been lazy updating my blog and was thinking whether to 关门大吉 my blog.

I bought a book on mooncake sometimes back from the bookstore, but was hesitating whether to bake mooncake anot till i saw from facebook shanghai mooncake. I was tempted to make it as it was Lunar 7th Month, most of the nights, i was out watching getai, and on those days i was not watching, i was so tired or lazy to make it, till onElection Day that day, after coming back from Election Day, i thought i will try it out.

I bought a packet of red bean paste, actually i wanted to buy lotus seed paste also but in the end, did not buy and buy red bean paste only as i do not know whether i will success in making it anot and the price of lotus seed paste is not cheap and also i'm quite lazy sometimes also to make it also.

I also bought a packet of melon seed and wanted to mix it with the red bean paste, but totally forgotten about it till when i finish doing it then i realize about the packet of melon seed, but it was too late. I also make some piglet.

Bak Kwa

This year, i did not really make any CNY cookies, but i 手痒痒, thought of making something, so make 肉干, recipe from Ohbin and since i have some oatmeal left, i thought i will finish it up by making a bottle of Oat and Raisin Cookies which i did before, this round i did not take picture of the cookies and bought a bottle of kuih bangkit from the supermarket to give to my good friend JG.

Banana Butter Pie

When i saw the Banana Butter Pie in Anncoo blog, it looks so good and that Anncoo mention that she promptly had two slices in a row, i was very tempted to do it.

I used Digestives Biscuits instead of Marie Biscuits

As i do not have a pie tray, so i use square baking tin to do it. As the Banana Butter Pie have to be put in fridge for at least one hour before serve, after one hour, i can't wait to take it out from the fridge and cut it and try it out. It is very yummy yummy. Thanks to Anncoo for sharing the recipe.

Mooncake


Doing mooncake with recipe from Baking Mum, use Hong Kong flour instead of Plain Flour as state in the recipe. Use 1 1/2 times of the ingredients and make 8 big one and 4 piglets. Saw that Anncoo mooncakes is so nice, really makes me 小巫见大巫。

Bread



心血来潮, thought of doing bread, so did some with recipe taken from Baking Mum blog. Used only half of the recipe. As i was rushing to watch a tv show, so i just do simple simple one, the first picture is plain one and the second picture, some of it is wrap up with sausage and fish floss and some with sausage only.
