Baked Zucchini & Ham Frittata


Came across Jane blog Baked Zucchini & Ham Frittata, tried doing it with ingredients i have in the fridge.   I used  a bit of everything like shredded carrot, sausage, cheese, shredded potato, mushroom.

Recipe in Jane's blog :

Ingredients:
  • 4 eggs, lightly beaten
  • 100g ham, sliced
  • 1 small zucchini, shaved into ribbons using a peeler
  • 1 1/2 tablespoons self raising flour
  • 2 tablespoons milk
  • salt and cracked black pepper to taste
  • 1/3 cup grated tasty cheese
  • 6 cherry tomatoes, halved
Method:
  1. Preheat oven to 175C. Line 18cm pan or baking tin with non-stick baking paper.
  2. Place the eggs in a large bowl and add zucchini, ham, flour, milk, salt and half of the cheese. Stir until well combined.
  3. Pour the mixture into prepared pan. Arrange tomatoes on top, pressing into the mixture slightly. Sprinkle top with remaining cheese.
  4. Bake for 30 minutes or until set and golden on top. Slice and serve warm or refrigerate and serve later.

  2. Ooooo, frittata, I like.. We just need many eggs, that's all, and we can put whatever we want inside the egg.. I saw in Food Network, only spinach and tomatoes and cheese also sedap already, yummzzz...

    1. If i not lazy, i will make again using a smaller pan as the other day i made it, i use a bigger pan...
