Came across Jane blog Baked Zucchini & Ham Frittata, tried doing it with ingredients i have in the fridge. I used a bit of everything like shredded carrot, sausage, cheese, shredded potato, mushroom.
Recipe in Jane's blog :
Ingredients:
- 4 eggs, lightly beaten
- 100g ham, sliced
- 1 small zucchini, shaved into ribbons using a peeler
- 1 1/2 tablespoons self raising flour
- 2 tablespoons milk
- salt and cracked black pepper to taste
- 1/3 cup grated tasty cheese
- 6 cherry tomatoes, halved
Method:
- Preheat oven to 175C. Line 18cm pan or baking tin with non-stick baking paper.
- Place the eggs in a large bowl and add zucchini, ham, flour, milk, salt and half of the cheese. Stir until well combined.
- Pour the mixture into prepared pan. Arrange tomatoes on top, pressing into the mixture slightly. Sprinkle top with remaining cheese.
- Bake for 30 minutes or until set and golden on top. Slice and serve warm or refrigerate and serve later.

Ooooo, frittata, I like.. We just need many eggs, that's all, and we can put whatever we want inside the egg.. I saw in Food Network, only spinach and tomatoes and cheese also sedap already, yummzzz...
